Ingredients

The ingredients are:
  • 1 cup orzo pasta
  • 4 cups chicken broth (no salt added)
  • 2 teaspoons olive oil (extra virgin)
  • 1/4 cup red bell pepper (diced)
  • 1/4 cup yellow onion, diced
  • 2 teaspoons thyme (fresh, chopped)
  • 1 clove garlic, minced
  • 2 tablespoons parsley, chopped
  • 2 tablespoons basil, chopped
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil (extra virgin)
  • 1/4 teaspoon black pepper

How to Make

  • Step 1: Put chicken broth in small saucepan and bring to a boil. Add orzo and cook 10-12 minutes or just until tender.

  • Step 2: In the meantime, place 2 teaspoons olive oil in small skillet on medium-low heat. Add peppers and onions. Saute till onions are translucent. Add fresh thyme and saute 1 minute. Add minced garlic and saute 30 seconds. Take off heat.

  • Step 3: When orzo is cooked, drain in a mesh strainer and return to saucepan. Add sauted veggies, lemon juice, 2 tablespoons olive oil, black pepper and chopped basil and parsley. Stir well to combine.
