Step 1: Preheat oven to 350f degrees
Step 2: Spray an 8 inch square baking dish with veggies spray and dust with cocoa, shaking out excess.
Step 3: In a small saucepan melt margarine on low heat; remove from heat and stir in cocoa, sugar, egg, applesauce and vanilla, beating until smooth
Step 4: In a separate bowl add flour , baking soda and salt , whisk together to blend; stir in walnuts if using. Gently stir flour mixture into cocoa mixtrue until well combined.
Step 5: Pour into prepared pan and bake for 25 to 30 minutes or until set.
Step 6: Cool completely and cut into 16 squares with a hot wet knife, store in refrerator.
Step 7: Alternately; spoon batter into mini cup cake pappers, bake until toothpick stuck in centre comes out clean, about 20 minutes. Top with choclolate frosting.
