Step 1: Preheat oven to 250 degrees.
Step 2: Place popped popcorn in a large roasting pan. Set aside.
Step 3: In a saucepan, over medium heat, cook sugar, corn syrup and butter, stirring constantly, until sugar is dissolved. Remove from heat.
Step 4: Stir in chocolate chips and vanilla. Stir until melted.
Step 5: Pour over popcorn, and mix together well.
Step 6: Put in oven and bake for 1 hour, stirring occasionally.
Step 7: If adding nuts, do so now, and mix into mixture with a large spoon.
Step 8: Spoon onto waxed paper to cool, stir to separate.
Step 9: Store in a large plastic container or put into baggies.
