Ingredients

The ingredients are:
  • 1 pound Italian sausage (mild,no casings)
  • 1 onion, chopped, medium
  • 3 stalks celery, sliced thinly
  • 4 pounds tomatoes, peeled, wedged
  • 2 cups tomato juice
  • 1 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1 tablespoon, parsley, minced
  • 1/2 teaspoon garlic salt
  • 2 pounds zucchini, cut into 1/2 inch pieces
  • 2 green peppers, chopped into 1 inch pieces, medium
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon grated parmesan cheese

How to Make

  • Step 1: Saute sausage and onion

  • Step 2: Add celery. Cook until tender

  • Step 3: Add juice and tomatoes, herbs and spices. Simmer for 20 minutes covered

  • Step 4: Add peppers cook 10 minutes .Covered

  • Step 5: Add Zucchini and cook 2 minutes you want them crisp

  • Step 6: Take off heat and add mozzarella and parmesan. Stir
