  • 4 persimmons (large persimmons, or 6 small, ripened
  • 3 large eggs, beaten
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1 teaspoon vanilla
  • Whipped cream for serving

How to Make

  • Step 1: Wash ripe persimmons, peel and remove seeds, mash well.

  • Step 2: Add small amount of water if necessary and put through colander.

  • Step 3: Measure 2 cups pulp and add remaining ingredients. Mix well.

  • Step 4: Pour into buttered casserole dish and bake for 1 hour.

  • Step 5: To serve, cut into squares and top with whipped cream.
