Ingredients

The ingredients are:
  • 1 3/4 cups sugar
  • 1/2 cup evaportated milk
  • 1/2 cup butter, cubed (can use hard margarine)
  • 1 cup creamy peanut butter (room temperature for easy mixing, a little more won't hurt I don't even measure)
  • 3 cups quick-cooking oats
  • 1 cup flaked coconut
  • 1/3 cup baking cocoa
  • 1 teaspoon vanilla

How to Make

  • Step 1: In a large bowl combine the oats with coconut and cocoa powder.

  • Step 2: In a large saucepan (use a large saucepan the butter/sugar mixture rises high when boiling) combine the sugar with evaporated milk and butter; bring to a boil stirring constantly, then boil for 2 minutes; turn off heat (keep saucepan on the element) stir in peanut butter and vanilla. Pour over the oat mixture then using a wooden spoon mix until completely combined.

  • Step 3: Drop by tablespoonfuls onto a plate/s (careful mix will be hot, I usually get 3 large platefuls) Cool for about 1 hour then refrigerate.
