Ingredients

The ingredients are:
  • 1/2 cup coconut oil, softened
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar OR 1/3 cup raw honey
  • 1 large egg
  • 3 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups gluten free flour blend (see my Gluten Free Flour Blend)
  • 2 teaspoons xanthan gum
  • 1 1/4 cups pecans, coarsely chopped (about 6 ounces)

How to Make

  • Step 1: Preheat oven to 350°. In a medium bowl, beat the coconut oil and butter with an electric mixer until pale and creamy, about 3 minutes.

  • Step 2: Gradually beat in the sugar or honey until well blended. Add the maple syrup, egg and vanilla and mix until blended.

  • Step 3: Add the flour and the xanthan gum and mix well. Fold in the pecans.

  • Step 4: Drop by tablespoonfuls on ungreased cookie sheets. Spread them out, if you like, as they don't spread in baking. Bake for about 20-25 minutes, until golden.
