Ingredients

The ingredients are:
  • 1 1/2 cups half and half cream (can use milk but will not be as good)
  • 1 cup sugar
  • 3/4 cup sweetened flaked coconut
  • 2 large eggs, lightly beaten
  • 1 teaspoon coconut extract (can omit and use 2 teaspoon vanilla)
  • 1/2 teaspoon vanilla
  • 3 tablespoons all-purpose flour
  • 2 tablespoons melted butter
  • 1 unbaked pastry shell (9 inches)
  • Sweetened whipped cream

How to Make

  • Step 1: In a large bowl, combine the half and half with sugar, coconut, eggs, flour, butter and, coconut extract and vanilla; pour into pie shell. Place the pie onto a baking sheet.

  • Step 2: Bake in a preheated 350 degrees F for 40-50 minutes or until a knife inserted near the center comes out clean. Cool to room temperature. Serve slices with a dollup of whipped cream. Refrigerate leftovers (right like your going to have any leftovers, no way!!!).
