Step 1: Preheat the oven to 180C and line a 12 hole (1/2 cup/80ml) muffin pan with paper cases.
Step 2: Place the combined flour, pumpkin, spinach and fetta in a large bowl and stir to combine.
Step 3: Whisk eggs, butter and buttermilk in a small bowl and then add to the flour mixture and stir until just combined (do not overmix).
Step 4: Divide the mixture evenly among the muffin pans and sprinkle evenly with pepitas and chia seeds.
Step 5: Bake for 20 to 25 minutes or until a skewer inserted in the centres comes our clean.
Step 6: Turn onto a wire rack to cool slightly and serve muffins warm or at room temperature.
