Ingredients

The ingredients are:
  • 1 cup self raising flour (150 grams)
  • 1 cup wholemeal self raising flour (160 grams)
  • 80 grams butter, melted
  • 1 cup buttermilk (250ml)
  • 2 tablespoon pepitas (pumpkin seeds)
  • 1 teaspoons chia seeds
  • 2 cups pumpkin, coarsely grated
  • 60 grams spinach leaves, finely grated
  • 100 grams fetta, coarsely grated
  • 1 egg, lightly whisked

How to Make

  • Step 1: Preheat the oven to 180C and line a 12 hole (1/2 cup/80ml) muffin pan with paper cases.

  • Step 2: Place the combined flour, pumpkin, spinach and fetta in a large bowl and stir to combine.

  • Step 3: Whisk eggs, butter and buttermilk in a small bowl and then add to the flour mixture and stir until just combined (do not overmix).

  • Step 4: Divide the mixture evenly among the muffin pans and sprinkle evenly with pepitas and chia seeds.

  • Step 5: Bake for 20 to 25 minutes or until a skewer inserted in the centres comes our clean.

  • Step 6: Turn onto a wire rack to cool slightly and serve muffins warm or at room temperature.
