Ingredients

The ingredients are:
  • 4 links (300 grams) beef sausages (casings removed)
  • 1 cup mozzarella cheese (100 grams - pizza cheese specified, a mix of parmesan and mozzarella)
  • 692 grams potatoes (4 medium red royal specified), thinly sliced)
  • 2 garlic cloves, thinly sliced
  • 2 tablespoons rosemary sprigs
  • 1 tablespoon olive oil
  • 90 grams pesto (1/3 cup basil pesto)
  • FOR PIZZA DOUGH
  • 1 1/2 cups water, warm(375ml)
  • 2 teaspoons dried yeast (7 grams)
  • 2 teaspoon caster sugar
  • 4 cups all-purpose flour (plain flour, 600 grams)
  • 2 teaspoons salt
  • 1/3 cup olive oil (80ml)

How to Make

  • Step 1: To make the pizza dough, combine the water, yeast and sugar in a small bowl and set aside for 5 minutes or until foamy.

  • Step 2: Combine the flour and salt in a large bowl and add the yeast mixture and oil and stir until the dough comes together and then turn onto a lightly floured surface and knead for 10 minutes or until smooth and elastic and place in an oiled bowl and cover with plastic wrap and place in a warm draught-free place for 1 hour or until the dough doubles in size.

  • Step 3: Meanwhile, preheat oven to 240C.

  • Step 4: Heat a frying pan over high heat and add the sausages and cook stirring with a wooden spoon to break up into small lumps, for 5 minutes or until brown all over.

  • Step 5: Punch down the dough and knead for 1 minute or until smooth and elastic and then divide the dough into 4 even portions and roll out each portion and roll out each portion into a 25cm disc and then divide the discs between 2 large baking trays.

  • Step 6: Sprinkle pizzas with half the cheese and top with sausage, garlic, rosemary and remaining cheese and drizzle with oil and bake, swapping trays halfway through cooking, for 15 minutes or until golden brown and cooked through and then drizzle with pesto and serve.
