Step 1: Cook fettuccine according to package directions.
Step 2: Meanwhile in a large ovenproof skillet melt the butter over medium-high heat; add onion and celery and saute for about 3 minutes. Add mushrooms and garlic and cayenne; cook and stir until vegetables are tender. Stir in 2 cups half and half; bring to simmer.
Step 3: In a small bowl combine cornstarch and 1/2 cup half-and-half until smooth; stir into skillet. Cook and stir for 2 minutes or until thickened and bubbly. Stir in Parmesan cheese just until melted then stir in chicken or turkey.
Step 4: Drain fettuccine; toss into add to creamed mixture, then heat through over medium-low heat.through. Sprinkle with mozzarella cheese; broil 4-6 inches from the heat for 2-3 minutes or until cheese is melted.
