  • 1 cup pecans, chopped
  • 1 cup flaked coconut
  • 2/3 cup granulated sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 3 large eggs
  • 1 can (16 ounce) pureed pumpkin
  • COCONUT GLAZE
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon coconut extract

  • Step 1: Heat oven to 325 degrees

  • Step 2: Grease jelly roll pan 151/2x101/2x1
