Ingredients

The ingredients are:
  • 100 grams pita bread (1 pocket pita lite wholemeal or gluten free wrap)
  • 1 1/2 tablespoon hummus
  • 1 cup spinach leaves (baby)
  • 50 grams eggplant (chargrilled eggplant, drained and patted dry with paper towel and cut into thin strips, 1/4 cup)
  • 2 tablespoons capsicum (roasted red capsicum strips in vinegar, patted dry with paper towel)
  • 160 grams shrimp ( green prawns, peeled and deveined)
  • 2 teaspoons low-fat sour cream (extra light)
  • 1 teaspoon sweet chilli sauce (or gluten free sweet chilli sauce)
  • 1 cucumber (small Lebanese cucumber, peeled into ribbons)
  • 136 grams cherry tomatoes (8 tomatoes, halved)
  • TO SERVE
  • Coriander leaves (optional)

How to Make

  • Step 1: Preheat oven to 220C (fan forced).

  • Step 2: Line a baking tray with baking paper and place pita pocket on tray and spread hummus evenly over the pocket and then top hummus with half the spinach leaves, then add eggplant and capsicum strips and top with the prawns and bake for 8 minutes, or until prawns are cooked and the base is slightly crispy.

  • Step 3: To serve, spoon sour cream over the top and drizzle over sweet chilli sauce and sprinkle with coriander leaves, if using.

  • Step 4: Toss remaining spinach leaves with cucumber and tomatoes and serve salad with the pizza.
