Step 1: Heat oven to 240C (220C fan-forced) and slide a baking sheet onto the top shelf.
Step 2: Dust another baking sheet with some of the semolina or flour.
Step 3: If using ready made dough, prepare following packet instructions.
Step 4: Dust the work surface with a little semolina (try not to use too mush as this reduced grip), then roll the dough into a rough oblong about 30cm long and then lift onto the baking sheet and reshape if you need to.
Step 5: If using pre-made pizza bases, place onto baking paper.
Step 6: Mix the oil and garlic with seasoning, then toss in the sprouts and spread 2 tablespoons mascarpone over the dough or base, leaving the edges free, then scatter with the sprouts and dot with the blue cheese and the remaining mascarpone and grind over some black pepper.
Step 7: If using dough, let the pizza rise for 10 minutes at room temperature and then slide the whole thing, baking sheet and all on top of the hot sheet in the oven and bake for 10 to 12 minutes until golden.
