Ingredients

The ingredients are:
  • FOR CHIPOTLE WHITE BEAN SALAD
  • 1/2 cup cashews (raw)
  • 1 can (400 gram) white beans (drained and rinsed)
  • 1/4 cup diced red onion
  • 1/4 cup mayonnaise (vegan mayonnaise, soy-free if necessary)
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon chipotle powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon chilli powder
  • FOR SANDWICH FILLING
  • 1/2 cup avocado, mashed
  • 1 teaspoon lime juice
  • Salt, pinch of
  • 240 grams bread (8 slices vegan sandwich bread)
  • 2 cups baby rocket, (or kale or similar leafy green, loosely picked)
  • 1 red capsicum (sliced with seeds and stems removed)
  • 1 orange capsicum (sliced with seeds and stems removed)
  • 4 slices (120 grams) cheese (vegan, optional)
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Place the cashews I a bowl, cover with hot water and soak for 10 to 15 minutes, until plump and softened, then drain and dice.

  • Step 2: Place a bowl with the beans, onion, mayonnaise, mustard, chipotle, paprika, salt and chilli and using a fork or potato masher, gently mash together until the beans are mostly broken down but still chunky and then taste and season more if needed and then place in the fridge until ready to assemble the (the long it marinated in the fridge, the stronger the flavours will be).

  • Step 3: In a separte bowl, combine the avocado, lime and salt and spread the avocado mash on one side of 4 pieces of bread.

  • Step 4: Divide the bean salad between the other 4 slices, then add the leafy greens and capsicum and then top with the cheese (if using), then the avocado-spread bread and serve or wrap up to enjoy later.
