  • 372 gram cooked quinoa (2 cups cooked)
  • 198 grams lentils (cooked, canned, 1 cup)
  • 2 tablespoons cilantro, chopped
  • 1/4 cup olive oil
  • 1/4 cup lime juice (fresh, juice of 2 limes)
  • 2 cloves garlic (processed through garlic press)
  • 2 1/2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • Cayenne, pinch
  • 1/4 cup red onion (diced)
  • 1/2 cup tomatoes, chopped
  • 82 grams corn, frozen (thawed, 1/2 cup)
  • 1 red bell pepper (roasted, chopped, I used jarred)
  • 1 avocado (peeled and diced)

How to Make

  • Step 1: Mix together the cooked quinoa, lentils and chopped cilantro; set aside.

  • Step 2: Whisk together the olive oil, lime juice, garlic, cumin, chili powder, paprika, salt and cayenne and gently mix with the quinoa mixture.

  • Step 3: Top with the remaining ingredients and serve with your favorite corn tortilla chips to scoop up with.
