Ingredients

The ingredients are:
  • 4 pounds potatoes, diced (6 red potatoes)
  • 2 tablespoons oil
  • 1 yellow onion (chopped)
  • 1 red bell pepper ( de-seeded, chopped)
  • 1/2 teaspoon curry powder (to taste)
  • Salt, dash
  • Pepper, dash
  • 16 ounces kielbasa sausage
  • 1 can (15 ounce) black beans (drained)
  • 1 can (15 ounce) whole kernel corn (drained)
  • 1/2 cup chicken stock
  • 1 tablespoon parsley, minced
  • 1/2 cup ketchup
  • 1 can (15 ounces) stewed tomatoes (fire-roasted)

How to Make

  • Step 1: Slice kielbasa coin style.

  • Step 2: In stock pot add oil, potatoes, onions, peppers and kielbasa. Fry until onions are translucent.

  • Step 3: Add curry powder, stir and heat a minute or so. Add chicken stock, parsley, canned vegetables and ketchup. Cover and simmer 30.minutes.
