Ingredients

The ingredients are:
  • 1 teaspoon cayenne powder
  • 2 teaspoon hot sauce (Tabasco)
  • 3 tablespoon butter
  • 1 pound pork roast (cut into 1/2 inch cubes)
  • 2 large onions (minced)
  • 1/2 pound smoked tasso (cut into 1/2 inch cubes) or 1/2 pound cooked ham (cut into 1 inch cubes)
  • 5 cloves garlic (minced)
  • 1 teaspoon thyme powder
  • 2 bay leaves
  • 1 tablespoon fresh parsley (minced)
  • 1/2 teaspoon ground cloves
  • 1/2 pound Italian sausage (skinless, chopped coarsely)
  • 3 cups hot beef broth
  • 1 1/2 cups uncooked rice

How to Make

  • Step 1: In a skillet, melt butter and add the pork cubes and onion. Saute until the onion is soft and the pork cubes are lightly browned.

  • Step 2: Add the ham cubes, garlic, thyme, bay leaves, parsley and cloves. Saute for an additional 5 minutes.

  • Step 3: Add in the chopped Italian sausage and saute for 5 more minutes.

  • Step 4: Add the broth and bring to a boil. Lower heat and simmer for 10 minutes.

  • Step 5: Add the rice, Tabasco and cayenne powder and return mixture to a boil. Lower heat and simmer for 20 minutes, stirring occasionally until mixture has absorbed all the liquid and the rice is cooked.
