Step 1: Start by preheating your grill.
Step 2: While the grill is preheating, mix together your rub and glaze. Create the rub by mixing together the smoked paprika, salt, and pepper. Then make your glaze by whisking together the peach preserves, green onions, olive oil, sriracha, Dijon, soy, and garlic. Separate 1/4 cup of the glaze to use on the chicken as it cooks, and keep the rest to serve for dipping.
Step 3: Season the chicken on both sides with the rub and place on the grill to cook. Cook the chicken with the lid closed, turning the chicken often, until it is cooked through (165°F - approximately 14-16 minutes). During the last minute of cooking, brush the 1/4 cup of glaze over the chicken. Remove the chicken, slice, and serve with the remaining glaze for diners to dip their chicken into.
