Ingredients

The ingredients are:
  • 350 grams dry macaroni pasta
  • 180 grams bacon (hickory-smoked middle bacon, coarsely chopped, 6 rashers)
  • 50 grams butter
  • 1 1/2 teaspoons smoked paprika
  • 1/3 cup all-purpose flour (plain)
  • 3 cups milk
  • 1/2 cup grated parmesan cheese (finely grated)
  • 4 spring onions, thinly sliced
  • 2 cups grated cheddar cheese (coarsely grated cheddar)

How to Make

  • Step 1: Cook the macaroni in a large saucepan of boiling salted water following packet directions or until al dente and then drain well..

  • Step 2: Meanwhile heat a large saucepan over medium heat and cook bacon, stirring for 5 minutes or until crisp and then use a slotted spoon to transfer to a bowl.

  • Step 3: Add butter to the pan and stir until butter melts and then add the paprika and cook, stirring, for 30 seconds or until aromatic and then add the flour and cook, stirring for 1 minute or until the mixture is slightly grainy.

  • Step 4: Add the milk ad use a ballon whisk to stir until well combined and cook, stirring with a wooden spoon for 5 to 7 minutes or until mixture boils and thickens.

  • Step 5: Remove from the heat and stir in parmesan, spring onion and three quarters of the cheddar and season.

  • Step 6: Preheat grill/broiler on medium.

  • Step 7: Stir macaroni into sauce and then spoon evenly among six 1 1/2 cup (375ml) ovenproof dishes and top with remaining cheddar and cook under grill/broiler for 2 minutes or until golden and heated through.
