Ingredients

The ingredients are:
  • 2 packets (400 grams) lattice biscuits (cookies, 2 x 200 gram packets)
  • 2 cups milk
  • 1 1/2 cups cream
  • 4 egg yolks
  • 2/3 cup custard powder
  • 1/2 cup caster sugar
  • 1 teaspoon vanilla essence
  • 1 tub (400 gram) vanilla icing (you will not need all of it)
  • 1 can (170 gram) passion fruit (pulp - optional)

How to Make

  • Step 1: Line the base and sides of a 20cm square pan with baking paper and arrange the biscuits in a single layer in the base of the pan, cutting to fit if necessary.

  • Step 2: Place milk and cream into a saucepan and bring to the boil and remove from heat.

  • Step 3: Place egg yolks, custard powder, sugar and vanilla into a bowl and using electric beaters, beat for 2 minutes until thick and creamy and then gradually add the hot milk mixture while beating.

  • Step 4: Transfer to a saucepan and continue to heat over a medium heat, stirring constantly until thickened and then spread custard over biscuits and smooth the surface and then top with another layer of biscuits and spread with vanilla icing and spread passionfruit pulp (if using) over icing.

  • Step 5: Chill until set and then cut into squares to serve.
