Ingredients

The ingredients are:
  • 1 pound lean ground beef
  • 1/4 cup yellow onion (chopped)
  • 1/4 cup green bell pepper (chopped)
  • 1 envelope (28 grams) taco seasoning
  • 1/2 cup water
  • 1 cup tortilla chips (crushed)
  • 1 can (16 ounce) refried beans
  • 4 ounce cheddar cheese, grated (or shredded, 1 cup, Use extra if in doubt)

How to Make

  • Step 1: In a lrg skillet, cook beef, onion & green pepper over med heat until meat is no longer pink & drain well of any rendered fat. Stir in the taco seasoning & water. Cook & stir until thickened (about 3 min). Set aside.

  • Step 2: Place crushed chips in a greased 8-in square baking dish. In a sml bowl, stir re-fried beans & spread loosely over the chips. Top w/the beef mixture & cheese.

  • Step 3: Bake (uncovered) at 375°F for 15-20 min or until heated through & cheese is melted. Top w/taco salad ingredients of choice & serve w/sour cream, salsa or a salad dressing like Catalina.

  • Step 4: SUGGESTED TOPPINGS: Chopped lettuce & tomatoes, sliced ripe olives, diced avocado, etc.
