  • 1/8 teaspoon salt
  • 1 teaspoon xanthan gum
  • 8 ounce water
  • 1/4 cup sugar substitute (Truvia, 13 packets or other zero-calorie sweetener)
  • 1/2 teaspoon vanilla
  • Cooking spray (PAM, or other zero-calorie cooking spray)

How to Make

  • Step 1: Mix all ingredients together until smooth

  • Step 2: Spray silicone candy trays with PAM

  • Step 3: Spoon the chocolate pudding into the candy tray

  • Step 4: Make sure to level it at the top of the tray so the bottoms are flat

  • Step 5: Freeze for 12 - 24 hours

  • Step 6: Enjoy!
