Ingredients

The ingredients are:
  • 120 grams bacon (finely chopped, 4 rashers)
  • 1 brown onion (finely chopped)
  • 2 zucchini, coarsely grated
  • 1 cup pumpkin, coarsely grated
  • 2 cups frozen mixed vegetables (just thawed)
  • 120 grams cheddar cheese (coarsely grated, 1 cup)
  • 150 grams self-rising flour (1 cup)
  • 1/2 cup parsley, coarsely chopped
  • 4 large eggs (lightly whisked)
  • 60 ml milk (1/4 cup)
  • 2 tablespoon olive oil
  • Mixed salad leaves, to serve (optional)

How to Make

  • Step 1: Preheat oven to 180C and grease and 20cm x 30cm lamington pan and line the base and 2 long sides wiwth baking paper.

  • Step 2: Heat a medium frying pan over medium heat and add the bacon and onion and cook, stirring for 5 minutes or until onion softens and then transfer to a bowl.

  • Step 3: Add the zucchini, pumpkin, mixed vegetables, cheddar, flour and parsley to the bacon mixture and stir to combine and then add the egg, milk and oil and stir to combine and season.

  • Step 4: Spoon into the prepared pan and smooth the surface.

  • Step 5: Bake for 40 minutes or until firm to the touch and set aside to cool before cutting into pieces.

  • Step 6: FOR FREEZING - wrap the slice pieces individually in plastic wrap, then place in an airtight continer, and freeze3 for up to 3 months.

  • Step 7: TIP - this slice is a kitchen saviour - you can add any veggies you have in your fridge or freezer.
