Ingredients

The ingredients are:
  • 1 pound Italian sausage
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 2 1/2 to 3 cups fresh broccoli, finely chopped (no need to pre cook it first if you chop it finely)
  • 2 cups shredded cheddar cheese, divided (can use more)
  • 8 large eggs, lightly beaten
  • 1 cup ricotta cheese
  • 1/4 cup half and half cream (or milk)
  • 1 teaspoon fresh ground black pepper
  • 1/2 teaspoon salt (seasoned salt, or to taste)
  • 1 plum tomato, thinly sliced
  • 1/4 cup Parmesan cheese, freshly grated

How to Make

  • Step 1: Preheat oven to 350 degrees F. Set oven rack to lowest position. Grease an 11 x 7-inch baking dish

  • Step 2: Cook the sausage meat with onion in a skillet over medium-high heat, stirring until sausage crumbles and is no longer pink; drain. Add in garlic and continue cooking until the sausage is lightly browned (about 10-12 minutes).

  • Step 3: Toss together sausage mixture with broccoli, and 1/2 cup or more of shredded cheese blend. Spoon into the baking dish.

  • Step 4: In a bowl combine 1/2 cup or more of the cheese blend with eggs, and next 4 ingredients; pour over broccoli mixture. Sprinkle with remaining 1 cup cheese mixture.

  • Step 5: Arrange tomato slices on top, then sprinkle Parmesan cheese over the tomatoes.

  • Step 6: Bake for about 35-40 minutes or until just set (do not over bake or the eggs will be to hard you want the eggs light and fluffy). Let stand 10 minutes before serving.
