Ingredients

The ingredients are:
  • 1 pound select beef liver, thinly sliced
  • 1/4 cup all purpose flour
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 small sweet onion, chopped
  • 4 large fresh mushrooms, cleaned, sliced
  • 1 medium zucchini. washed, 1/2 inch slice, cut bite size
  • 1/2 medium green sweet pepper, chopped
  • 1/2 medium sweet red pepper, chopped
  • 2 tablespoons olive oil

How to Make

  • Step 1: Mix the salt and pepper into the flour. Lightly dredge the liver, both sides in the flour

  • Step 2: Put a tablespoon oil in a large skillet, medium high heat, add mushrooms and onion stir fry until onions translucent and the mushrooms are golden about 5 minutes

  • Step 3: Add 1 tablespoon oil and the remaining vegetable and the liver, stir the vegetables, flip the liver after 5 minutes continue cooking for a further 5 minutes

  • Step 4: The liver will be cooked and the veggies will be hot through but still very crisp.
