Ingredients

The ingredients are:
  • 1 pound boneless skinless chicken breasts (4 fillets)
  • Salt & pepper to taste
  • 1 tablespoon oil
  • 1 cup low-sodium chicken broth
  • 3 tablespoon balsamic vinegar (white)
  • 1/2 teaspoon rosemary, chopped (fresh)
  • 2 teaspoon cornstarch
  • 1 1/2 teaspoon granulated sugar
  • 2 pears (medium pears, peeled, each cut into 8 wedges)
  • 1/2 cup dried cranberries (or dried cherries)

How to Make

  • Step 1: Sprinkle chicken breast with salt & pepper.

  • Step 2: Heat oil, medium high heat, in a skillet large enough to hold the breasts.

  • Step 3: Add chicken cook until a thermometer reaches 165F and the chicken is nicely, browned, apprx. 10 minutes.

  • Step 4: Remove and keep warm.

  • Step 5: Mix the cornstarch with 3 tbsp broth.

  • Step 6: Stir together the broth, balsamic vinegar, rosemary, dissolved cornstarch & sugar.

  • Step 7: Pour into the skillet, add pears & cranberries, medium heat and cook until pears are tender apprx 5 minutes and the sauce has thickened.

  • Step 8: Return chicken to pan simmer uncovered until heated through 5 minutes.
