Step 1: Using an electric mixer on med speed, beat the cream cheese, sugar, Bailey's Irish Cream & vanilla until well-combined & smooth.
Step 2: In a separate bowl, use an electric mixer to whip the cream on high until soft peaks form.
Step 3: Fold about 1/3 of the whipped cream into the cream cheese mixture. Then gently fold in the remaining whipped cream.
Step 4: Spoon the cheesecake mixture evenly into the mini tart shells & chill at least 4 hrs. The size of commercial tart shells can vary, so you may have an excess of cheesecake filling you can put in a sml bowl. :-)
Step 5: TO SERVE: Serve as is or garnish as desired (a sml strawberry w/a mint leaf is nice).
