Step 1: Stir pancake mix & water together w/a whisk. Batter will be slightly lumpy. Do not over-mix.
Step 2: Place cooked bacon strips onto a lightly greased & preheated griddle or large spray-coated non-stick fry pan. Pour pancake batter carefully in a rectangular shape to cover each slice of bacon. This is likely best done in 2 batches (I spooned it on w/a tbsp & spread the batter evenly w/it).
Step 3: Cook pancakes 1 1/4 to 1 1/2 min on each side (or until golden brown), turning only once. Serve w/maple syrup at room temp or warmed (They were pictured w/scrambled eggs & 3 dippers on the plate).
Step 4: NOTES FROM ME: If your bacon strips are lrg or thick-sliced, it will work best to halve them for this recipe. The yield was shown as 8 pancake dippers = 8 servings (too few IMO). It's a bit like Lay's Potato Chips ... I know -0- adults & few kids who could eat just 1 of these dippers. On the other hand, 3 as shown on the recipe is too many IMO. So I settled on 2 per serving. As an alternative to maple syrup, the dippers can also be used like toast w/basted, soft-boiled or creamy scrambled eggs = Your choice to make. :-)
