Ingredients

The ingredients are:
  • 1/2 cup pecan halves
  • 114 grams granulated sugar (1 cup)
  • 1/2 teaspoon salt
  • 1/2 teaspoon cardamom
  • Vanilla bean (1/2 bean, split lengthwise, seeds scraped and reserved)
  • 1 sheet (8.64 ounce) puff pastry (1/2 of a 17.3 ounce package frozen, thawed)

How to Make

  • Step 1: In the work bowl of a food processor combine first 4 ingredients (pecans - vanilla bean seeds) and process until mixture is incorporated and texture is that of fine sand.

  • Step 2: Pour about half of the sugar mixture onto a work surface. Place puff pastry on top and sprinkle with additional sugar mixture. Begin rolling pastry, working quickly, incorporating more sugar as needed (similar to adding more flour to pie crust or cookies). Roll up dough, jelly-roll style begging with each long end and meeting in the middle. Place rolled dough in freezer until firm (10-15 minutes).

  • Step 3: Line a baking sheet with parchment paper and spritz with water.

  • Step 4: Cut dough log into 1/4 inch slices and place palmers about 2 inches apart on prepared pan. Freeze sliced cookies for 1 hour. (****you may slice the entire log at once and place slices on a parchment paper lined sheet pan in the freezer. Bake straight from the freeze 12 at a time).

  • Step 5: Preheat oven to 425 degrees F. Bake palmers for 8-10 minutes, turning with a spatula halfway through baking. Let cool completely on a wire rack.
