The ingredients are:
  • 1 tablespoons olive oil
  • 2 teaspoon unsalted butter
  • 1/2 cup white onion, thinly sliced
  • 1 pound potatoes (fingerling potatoes, halved lengthwise)
  • 1/2 cup chicken stock (unsalted)
  • 3 sprigs oregano
  • 2 sprigs thyme
  • 1 teaspoon oregano, chopped
  • 1 teaspoon thyme, chopped
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

How to Make

  • Step 1: Preheat oven to 375°F. Heat olive oil and unsalted butter in a large oven proof skillet over medium-high. Add white onions and fingerling potatoes, cook 8 minutes. Add chicken stock, oregano sprigs and thyme sprigs. Cover; bake for 10 minutes. Discard oregano and thyme. Sprinkle with chopped oregano, chopped thyme, salt and pepper. Serve
