Step 1: First, make the granola: Combine the oats, almonds, pepitas, cinnamon, and salt in a large bowl.
Step 2: Add the avocado oil and 2/3 cup of the honey and mix well.
Step 3: Carefully pour this out onto a large oven-proof pan. Bake at 300 degrees for about 50 minutes, removing the pan and stirring well about halfway through the bake.
Step 4: Scoop the mixture onto parchment paper to cool.
Step 5: Melt the butter and 5 tablespoons raw honey over low heat in a small saucepan.
Step 6: On the same oven-proof pan from earlier (no need to have washed it), combine the cooled granola and the pretzels with the butter and honey mixture. Stir to evenly coat the dry mix.
Step 7: Return the granola mix to the oven and bake at 300 degrees for about 10-15 minutes. You can remove and toss this about halfway through, again.
Step 8: Remove mix from pan and cool on parchment paper.
Step 9: In the same large bowl from earlier (you don't even need to have washed it), combine cooled granola mix with 1.5 cups semi sweet chocolate chunks and 1 cup dried cranberries.
Step 10: Store in an air tight container.
