Step 1: Preheat oven to 180C,
Step 2: Grease and line 2 baking trays with baking paper.
Step 3: Using an electric mixer to beat butter and combined sugars in a bowl unil pale and creamy and then add the egg and beat until just combined and then stir in the flour and choc bits until well combined.
Step 4: Roll level tablespoonfuls of mixture into balls and place on prepared trays (you should have 24 cookies), allowing room for spreading and then gently press to flatten slightly and bake for 12 to 14 minutes or until golden and set aside to cool slightly.
Step 5: Meanwhile, to prepare the filling, place choc melts in a small microwave safe bowl and heat in microwave on medium for 1 minute and then stir and repeat, stirring every 30 seconds until melted and smooth.
Step 6: Grease and line a baking tray with baking paper and place the marshmallows 5cm apart, on the prepared tray and bake for 5 to 8 minutes or until warm and softened.
Step 7: Place 1 cookie on a serving platter and top with a little melted chocolate and a warm marshmallow and top with another cookie and press down gently and then repeat with remaining cookies, melted chocolate and marshmallows to make 12 s'mores.
Step 8: Serve immediately.
