Step 1: Whisk eggs and milk in a bowl and add the crumpets, one at a time, to the egg mixture and set aside, turning once for 20 seconds to soak.
Step 2: Heat oil in a large frying pan and cook the crumpets in 2 batches for 1 to 2 on each side or until golden brown.
Step 3: Combine the cream cheese, lemon zest and lemon juice in a bowl and then spread the cream cheese mixture over each crumpet and then arrange the smoked salmon, onion and capers on top and sprinkle with dill and serve with lemon wedges.
Step 4: TIP - to make it a light meal add a side of lightly dressed or sautéed baby spinach leaves.
