Step 1: Combine the tomato sauce with the sherry and sugar.
Step 2: Heat the oil in a wok over a medium heat and add the chilli, garlic and ginger. Stir in the shallots and tomato mixture.
Step 3: Simmer for 2-3 minutes, stirring occasionally.
Step 4: Add the prawns and simmer until just cooked.
Step 5: Serve with pasta and garnish with chopped parsley/chives.
