Ingredients

The ingredients are:
  • 3 tablespoons olive oil
  • 2 garlic cloves (peeled, minced)
  • 1 yellow onion (large onion, peeled, chopped)
  • 3 carrots, chopped (peeled)
  • 3 celery stalks (trimmed, chopped)
  • 1/2 bunch parsley (fresh, chopped, including stems)
  • 1 can (28 ounce) whole tomatoes (I like Cento brand)
  • 6 cups chicken broth (low sodium)
  • 1/2 teaspoon dried thyme
  • Celery leaves, chopped, a handful
  • Salt, to taste
  • Pepper, freshly ground, to taste
  • 1 cup orzo (dry)
  • 4 ounces kefalotiri cheese (grated, OR feta cheese crumbled)

How to Make

  • Step 1: Wash and prepare vegetables: peel and mince the garlic, peel and chop the onion and carrot, chop the celery (reserve the leaves), chop the parsley (including the stems), chop the tomatoes (reserve the juice).

  • Step 2: In a large pot, heat the oil and saute the onion and garlic until translucent.

  • Step 3: Add the carrots, celery, and parsley/stems and cook 5 minutes. Pour in the tomatoes and their juice, cook 5 minutes longer.

  • Step 4: Stir in the chicken broth, thyme, and celery leaves, season with salt and pepper. Bring to a boil, reduce heat and simmer, covered over low heat about 30 minutes.

  • Step 5: While the soup simmers, in a separate pan, prepare orzo according to package directions, to al dente. Drain and set aside.

  • Step 6: Strain the soup into a clean pot, pressing down on the vegetables to extract the liquid. (May reserve the vegetables for another use- **see below).

  • Step 7: Bring the strained broth to a boil, stir in orzo.

  • Step 8: Serve with grated/crumbled cheese over each serving.

  • Step 9: **I puree the reserved vegetables in my blender, freeze in an ice cube tray, store cubes in a plastic bag in the freezer, and use to them to flavor soups, stews, sauces and gravies.
