Step 1: Separate eggs.
Step 2: Beat egg whites until stiff but not dry.
Step 3: Gradually beat in 1/2 cup of sugar.
Step 4: In separate bowl, beat egg yolks with 1/4 cup sugar and milk.
Step 5: Fold egg yolk mixture into egg white mixture.
Step 6: When blended, add whipping cream and rum extract.
Step 7: Chill before serving.
Step 8: Pour into glasses and sprinkle with nutmeg.
