Ingredients

The ingredients are:
  • 2 limes, whole (large limes)
  • 60 ml diet lime cordial (1/4 cup)
  • 750 ml soda water (3 cups chilled)
  • 1/2 cup mint leaves
  • 78 grams frozen blackberries (12 blackberries)
  • Ice cubes, to serve

How to Make

  • Step 1: Cut on lime in half crossways, then very thinly slice and cut the second lime into small dice.

  • Step 2: Using a mortar and pestle, crush diced lime to extra juice and then reserve the juice.

  • Step 3: Combine cordial, soda water and reserved lime juice in a jug.

  • Step 4: Divide lime slices, diced lime, mint leaves, blackberries and ice cubes between short serving glasses.

  • Step 5: Pour soda water mixture into glasses and stir with a swizzle stick and serve,
