  • The following recipe serves 6 people.

Ingredients

The ingredients are:
  • 4 to 5 cups grated potatoes (use peeled potatoes,for grating I use a food processor)
  • 2 to 3 tablespoons grated yellow onion (I usually do not add)
  • 1 large egg (beaten)
  • 1/4 cup matzo meal (I use all-purpose flour)
  • 1 teaspoon salt (to taste)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon pepper
  • Vegetable oil, for frying
  • Sour Cream (we serve ours with dollops of sour cream)
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Peel and grate potatoes and onion to prefered texture, place in colander drain and squeeze dry, place in large mixing bowl, stir in beaten egg, flour, salt, baking powder and pepper.

  • Step 2: In large skillet (I use two skillets) add enough oil to fry, heat over medium-high heat, for each latke spoon in 1/4 cup pressing down lightly to flatten leaving space between latkes.

  • Step 3: Fry turning once until golden brown, crispy on the outside and cooked through, tranfer to wire rack or paper towel lined baking sheet to drain.

  • Step 4: Serve hot, we love ours with a dollop or two of sour cream.

  • Step 5: While I have not yet done the make ahead, for large crowds you may want to do so, place latkes on a wire rack cover with paper towel, set aside for up to two hours, remove paper towel place on baking sheet, bake in preheated 350 oven until heated through (about ten minutes)
