Ingredients

The ingredients are:
  • FOR BROWNIE
  • 135 grams milk chocolate (good quality)
  • 180 grams unsalted butter
  • 250 gram caster sugar (sifted)
  • 3 large eggs (lightly beaten)
  • 1/2 vanilla pod (seeds only)
  • 180 grams all-purpose flour (sifted, plain)
  • 30 grams cocoa powder (good quality sifted)
  • FOR PEANUT BUTTER LAYER
  • 250 grams cream cheese (softened)
  • 250 grams crunchy peanut butter
  • 80 grams caster sugar (sifted)
  • 150 ml thickened cream
  • 1 large egg (lightly beaten)
  • TOPPING:-
  • 60 grams milk chocolate, good quality melted

How to Make

  • Step 1: Preheat oven to 165C.

  • Step 2: Line a 20cm x 30cm slice tin with baking paper.

  • Step 3: In a clean bowl over a saucepan of boiling water melt butter and chocolate together making sure that bowl does not come in contact with the water.

  • Step 4: Once melted remove from heat and whisk in sugar followed by the eggs and vanilla bean seeds and then add flour and cocoa, mixing until combined and then pour into prepared tin and set aside.

  • Step 5: To make peanut butter lay - in a clean bowl, with electric mixer, cream together cream cheese, crunchy peanut butter and caster sugar for 3 minutes and then beat in cream and egg, mixing until just combined and then pour peanut butter mix evenly over brownie mix, then using either the end of a spoon or your finger, randomly swell mixes together.

  • Step 6: It is up to you how mixed in you want it to be - go lightly or go crazy.

  • Step 7: Pop into the oven and bake for 40 minutes until it is just a little wobbly.

  • Step 8: Remove from oven and allow to cool completely before drizzling with melted chocolate and then pop into the fridge for a couple of hours before cutting to serve.
