Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cinnamon
  • 1 yellow onion (chopped)
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger root (fresh)
  • 3/4 cup low-sodium chicken stock
  • 1 pound ground turkey (browned in a skillet till crumbly*)
  • 1/2 teaspoon chili powder (spicy red chili powder)
  • 1/2 tablespoon curry powder (or more)
  • Salt and pepper, to taste

How to Make

  • Step 1: Heat oil over medium heat in a large skillet.

  • Step 2: Sprinkle the cinnamon into the oil and stir until fragrant.

  • Step 3: Stir the onion into the cinnamon oil and cook for 5 minutes, until softened and golden in color.

  • Step 4: Stir in the garlic, and ginger, and continue to cook for 3 additional minutes. Pour in 1/4 cup chicken stock and cook for 2 minutes, adding a bit more if mixture is too thick.

  • Step 5: Stir in the turkey, chili powder, curry powder, and the rest of the stock into the sauce. Cover and cook for 10 minutes until mixture has thickened to sauce consistency, adding additional stock if mixture looks dry. Taste the curry and add salt and pepper if needed.

  • Step 6: Serve over rice.

  • Step 7: *You can also use leftover Thanksgiving turkey cut into small cubes.
