Ingredients

The ingredients are:
  • 3 cups zucchini (spiralized)
  • 1 teaspoon salt (or to taste)
  • 2 teaspoons olive oil (or vegetable oil)
  • 2 teaspoons butter
  • 1/2 cup white onion (I often add more)
  • 3 1/2 cups diced tomatoes (or chopped, fresh or canned)
  • 1 clove garlic, minced (optional)
  • 1/2 to 1 teaspoon dried basil (or 1 1/2 – 2 tablespoons fresh )
  • 1/2 teaspoon oregano (optional)
  • 1/4 cup dry white wine (1/4 cup)
  • 6 ounces cooked fish (1 1/2 cups diced fillets)
  • 60 grams shrimp (12 shrimp)

How to Make

  • Step 1: In large pot over medium heat add butter and vegetable oil, saute onion until soft and golden

  • Step 2: Add tomatoes, seasoning, wine, garlic if using simmer 7 – 8 minutes, lower heat add fish and shrimp simmering until done.

  • Step 3: While sauce is simmering cook zucchini ‘pasta' in salted water until just done, drain and top with the tomato sauce.

  • Step 4: NOTE one can make the tomato sauce ahead of time, heat and add in the seafood while cooking the zucchini pasta
