Ingredients

The ingredients are:
  • FOR BASE
  • 300 grams all-purpose flour (plain, sifted, 2 cups)
  • 55 grams caster sugar (1/4 cup)
  • 125 grams unsalted butter (chilled and cubed)
  • 1 large egg
  • 1 teaspoon vanilla essence
  • 320 grams strawberry jam (1 cup)
  • FOR TOPPING
  • 2 large eggs (lightly beaten)
  • 55 grams caster sugar (1/4 cup)
  • 180 grams desiccated coconut (2 cups)

How to Make

  • Step 1: Preheat your oven to 180C. and grease and line a 26 cm square baking tin with baking paper.

  • TO MAKE THE BASE

  • Step 2: Combine the flour and sugar in a large bowl and stir to distribute evenly.

  • Step 3: Add the butter and rub it into the flour between your fingertips until the mixture resembles breadcrumbs.

  • Step 4: Lightly beat the egg with the vanilla and add egg mix into the bowl; then use a wooden spoon to bring the mixture together to form a dough.

  • Step 5: Press the dough evenly into the base of the tin and bake for 15 minutes or until the pastry is golden.

  • Step 6: Remove tin from the oven and allow to slightly cool in the tin, then spread jam over warm base.

  • FOR THE TOPPING

  • Step 7: Whisk the eggs and sugar in a large bowl, then stir through the coconut.

  • Step 8: Spread the coconut mixture over the jam and bake for 15 minutes or until the top is golden.

  • Step 9: Remove slice from the oven and allow to cool in the tin. Turn out onto a chopping board and cut into squares or slices.
