Ingredients

The ingredients are:
  • 1/2 cup raisins (golden)
  • 3 1/2 pounds sweet potatoes (about 6 medium potatoes, peeled,rinsed and sliced into 1/2 inch slices)
  • 5 cups carrots (4 large carrots, peeled, rinsed and cut into 1 1/2 pieces)
  • 1/4 cup butter (or margarine)
  • 1 1/2 cups brown sugar
  • 1/3 cup orange juice

How to Make

  • Step 1: In a small bowl,cover raisins with hot water set aside for 30 minutes and preheat oven to 375 degrees.

  • Step 2: Place the sweet potatoes & carrots into a very large pot or a Dutch oven ,and just enough water to cover the vegetables.

  • Step 3: Bring to a boil and reduce heat to medium heat then cook uncovered until tender,about 20 to 25 minutes.

  • Step 4: Drain and place into a greased 9 x 13 inch baking dish.

  • Step 5: Drain the raisins ,and in a small pan melt butter and add raisins.

  • Step 6: Add brown sugar and orange juice, making sure all the sugar in dissolved then pour over veggies.

  • Step 7: Bake uncovered for 25 to 30 minutes or until bubbly.

  • Step 8: If you like,occasionally baste the vegetables with the sauce.

  • Step 9: Let stand for 10 minutes and stir before serving.
