Ingredients

The ingredients are:
  • 4 cups chicken stock (unsalted)
  • 2 cups dried beans (Great Northern beans, dried and unsoaked)
  • 2 cups white onion, chopped
  • 1 1/3 cups salsa (tomatillo salsa)
  • 1/2 cup water
  • 2 teaspoons ground cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 8 garlic cloves, minced
  • 1 boneless (2 pound) pork shoulder roast (trimmed and cut into 1 1/2-inch cubes, about 2 1/2 pounds purchase weight)
  • 1/2 cup green onions, thinly sliced
  • 1/2 cup radishes, thinly sliced (optional)

How to Make

  • Step 1: Combine chicken stock, beans, white onion, salsa, 1/2 cup water, cumin, oregano, salt, garlic, and pork in a 5-to-6 quart slow cooker. Cover, and cook on low 7 hours 30 minutes to 8 hours. Sprinkle with green onions and radishes, if desired, before serving.
