  • 4 pound whole squash (1 spaghetti squash)
  • 1 tablespoon oil (vegetable oil, or enough to brush on surfaces of squash)
  • Sea salt (to taste)
  • Black pepper, freshly ground (to taste)

How to Make

  • Step 1: Preheat oven to 350

  • Step 2: Cut spaghetti squash in half lengthwise, scoop out seeds, if difficult to cut a few minutes in the microwave will make halving easier

  • Step 3: Brush cut side with oil, season with a sprinkling of salt and pepper, place on a cookie sheet lined with parchment paper cut side up

  • Step 4: Bake in 350 oven for 35-45 minutes or until squash separates easily from the skin, cool for approximately 20 minutes, use a fork to scoop and separate squash strands

  • Step 5: Place in a serving dish, serve with a side of your favorite spaghetti toppings, spaghetti sauce, freshly snipped herbs with shredded cheeses and halved cherry tomatoes or pesto are all excellent choices
