Step 1: Grease and flour a cookie sheet; set aside.
Step 2: In a medium mixing bowl combine coconut and cornstarch.
Step 3: Stir in sweetened condensed milk and vanilla until mixture is combined.
Step 4: Stir in the chopped candied cherries.
Step 5: Drop by small rounded teaspoonfuls about 1 inch apart on the prepared cookie sheet.
Step 6: Bake in a 325 degree F oven for 12 to 15 minutes or until lightly browned on bottoms.
Step 7: Cool on cookie sheet for 1 minute. Transfer cookies to a wire rack; cool.
