Ingredients

The ingredients are:
  • 2 cups all-purpose flour
  • 1 1/2 cup granulated sugar
  • 3 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup shortening
  • 1 cup milk
  • 1 teaspoon vanilla
  • 4 egg whites
  • FOR ICING
  • 1/2 cup granulated sugar
  • 1/4 cup light corn syrup
  • 2 tablespoons water
  • 2 egg whites
  • 1 teaspoon vanilla
  • FOR FILLING
  • 1/2 cup walnuts, finely chopped
  • 1/3 cup raisins (cut-up)
  • 1/3 cup figs (cut into strips)

How to Make

  • Step 1: Heat oven to 350 degrees.

  • Step 2: Grease and flour 2 round layer pans.

  • Step 3: Combine dry ingredients in a bowl, mixing well.

  • Step 4: Add shortening, milk and vanilla, mixing just until combined.

  • Step 5: In a separate bowl, beat egg whites until stiff peaks form.

  • Step 6: Carefully fold egg whites into cake batter in two stages.

  • Step 7: Pour into pan(s).

  • Step 8: Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool.

  • Step 9: To make icing. combine sugar corn syrup and water in a small saucepan. Cover and heat to rolling boil on medium heat.

  • Step 10: Remove cover and boil without stirring till mixture reaches 245 degrees.

  • Step 11: Meanwhile, beat egg whites until stiff peaks form .

  • Step 12: Very slowly pour hot syrup in a thin stream into egg whites, beating on high till stiff peaks form.

  • Step 13: Add vanilla.

  • Step 14: To make filling: combine 1 cup of the icing with remaining filling ingredients.

  • Step 15: To assemble, fill layers with half the filling; spread remainder over top of cake.

  • Step 16: Frost side and top of cake with remaining frosting.
