Ingredients

The ingredients are:
  • 2 1/4 cups flour (cake flour, or 2 cups all purpose flour)
  • 1 1/2 cup granulated sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup oil (salad oil)
  • 5 egg yolks (7 if using all purpose flour)
  • 3/4 cup water, cold
  • 2 tablespoons grated lemon peel
  • 2 teaspoons vanilla
  • 1 cup egg whites (7-8 eggs approximately)
  • 1/2 teaspoon cream of tartar

How to Make

  • Step 1: Heat oven to 325 degrees.

  • Step 2: Sift together flour, sugar, baking powder and salt.

  • Step 3: Make a well and add oil, egg yolks, water, vanilla, and lemon peel, stir till smooth.

  • Step 4: In a separate bowl combine cream or tartar and egg whites. Beat until stiff peaks form.

  • Step 5: Gradually add batter to egg whites, folding together just until blended.

  • Step 6: Pour into ungreased tube pan.

  • Step 7: Bake 75 minutes, or until top springs back when touched lightly.

  • Step 8: Invert tube pan on a funnel and leave toll completely cool.

  • Step 9: Frost as desired.
