Ingredients

The ingredients are:
  • 6 medium (2 pounds) tomatoes (chopped into 1/2 inch dice)
  • 2 medium (16 ounces) sweet onions (peeled chopped into 1/4 inch dice)
  • 2 medium (6 ounces) sweet green peppers (seeded, membranes removed, chopped into 1/2 inch dice)
  • 6 (12 ounces) celery ribs (washed, sliced 1/2 inch pieces)
  • 1/3 cup red wine vinegar
  • 1/3 cup oil (olive oil)
  • 2 tablespoons honey
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon hot sauce (peri peri or tabasco are good)
  • Salt and pepper to taste

How to Make

  • Step 1: Combine the tomatoes, onion, peppers and celery in a bowl.

  • Step 2: Whisk together the vinegar, honey, cloves, hot sauce,salt and pepper all the while slowly pouring in the oil.

  • Step 3: Pour the dressing into the vegetables, gently mix.

  • Step 4: Place in fridge for at least 4 hours.

  • Step 5: Drain the salad of excess dressing Leave at room temperature for 20 minutes before serving.
